Cream Of Green Pepper Soup(A Cold Soup)

  • 6 green bell peppers, chopped
  • 1 onion, chopped
  • 4 Tbsp. unsalted butter
  • 2 c. canned chicken broth
  • 1 1/8 tsp. ground cumin
  • 1 c. half and half or light cream
  • 4 tsp. lemon juice
  • yogurt for garnish

Directions

    Saute peppers and onion in butter over moderate heat 15 minutes.

    Add broth and cumin, bring to boil and simmer 15 minutes.

    Puree (in batches) in food processor or blender, strain through fine sieve into bowl and stir in cream, lemon juice, white pepper and salt to taste.

    Chill at least 4 hours or overnight. Serve with dollops of yogurt.

    Yield: 4 1/2 to 5 cups.
