- 1 large pastry shell
- 2/3 c. sugar
- 3 1/2 Tbsp. cornstarch (may substitute 5 Tbsp. flour)
- 1/2 tsp. salt
- 2 1/2 c. milk
- 3 egg yolks, slightly beaten
- 1 tsp. vanilla
Directions

1Combine sugar, cornstarch (or flour) and salt in top of double boiler.

2Stir in cold milk; cook over boiling water (stirring constantly) until thickened.

3Cover and cook 15 minutes longer. Stir a little of hot mixture into slightly beaten egg yolks.

4Add remaining mixture into double boiler and cook for 2 minutes over hot (not boiling) water.

5Stir constantly.

6Cool and add vanilla. Pour into baked shell.

7If desired, cover with meringue and bake at 325° for about 15 minutes or until lightly browned or just before serving top with whipped cream.
