Ingredients

  • 1 large pastry shell
  • 2/3 c. sugar
  • 3 1/2 Tbsp. cornstarch (may substitute 5 Tbsp. flour)
  • 1/2 tsp. salt
  • 2 1/2 c. milk
  • 3 egg yolks, slightly beaten
  • 1 tsp. vanilla

Directions

    Combine sugar, cornstarch (or flour) and salt in top of double boiler.

    Stir in cold milk; cook over boiling water (stirring constantly) until thickened.

    Cover and cook 15 minutes longer. Stir a little of hot mixture into slightly beaten egg yolks.

    Add remaining mixture into double boiler and cook for 2 minutes over hot (not boiling) water.

    Stir constantly.

    Cool and add vanilla. Pour into baked shell.

    If desired, cover with meringue and bake at 325° for about 15 minutes or until lightly browned or just before serving top with whipped cream.
