- 1/2 c. butter or margarine
- 1 c. boiling water
- 1 c. sifted enriched flour
- 1/4 tsp. salt
- 4 eggs
Directions

1Melt butter in boiling water.

2Add flour and salt all at once; stir vigorously.

3Cook, stirring constantly, until mixture forms a ball that doesn't separate.

4Remove from heat and cool slightly. Add eggs, one at a time, beating vigorously after each until smooth.

5Drop dough by heaping tablespoonfuls 3 inches apart on greased cookie sheet.

6Bake in very hot oven (450°) 15 minutes, then in slow oven (325°) 25 minutes.

7Remove cream puffs from oven; split.

8Turn oven off and put cream puffs back in oven to dry out, about 50 minutes.

9Cool on rack.
