Ingredients

  • 1 c. boiling water
  • 1/4 tsp. salt
  • 1/2 c. butter
  • 1 c. sifted all-purpose flour
  • 4 eggs (unbeaten)
  • whipped cream
  • powdered sugar

Directions

    Combine water, salt and butter in saucepan; bring to boiling point.

    Add flour all at once and cook, stirring constantly until mixture leaves the sides of the pan clean.

    Cool; add eggs, one at a time, beating each in thoroughly.

    Drop by tablespoon a little distance apart on greased baking sheets; bake in hot oven (450°) for 15 minutes.

    Reduce heat (350°) and bake 20 to 25 minutes longer.

    Puffs should bake until no beads of moisture can be seen on them.

    Cool; cut top out.

    Fill with whipped cream.

    Replace top.

    Dust with powdered sugar.
