  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 1 tsp. salt
  • 2 c. milk
  • 2 c. chicken broth
  • 1 chopped onion
  • 1 to 2 c. potatoes
  • 2 c. chopped cauliflower or broccoli
  • 1 c. chopped celery
  • diced ham, cheese, other vegetables (optional)

    Melt butter in soup kettle; add flour and salt to form a paste. Add milk. Stir until slightly thick. Add chicken broth, onion, potatoes, cauliflower and/or broccoli and celery. Simmer until vegetables are soft/firm.
