Creamed Cabbage Soup

  • 1 head diced cabbage, lightly salted, cooked and drained
  • 1 lb. ham, diced
  • 1 large onion, diced
  • 1/2 stick butter
  • 2 c. water
  • 1 tsp. celery salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. chicken soup base
  • 1/2 stick butter
  • 2 qt. milk
  • parsley flakes
  • 3 Tbsp. cornstarch, stirred into 1/2 c. water

Directions

    Combine ham and onion and saute in 1/2 stick butter until tender, approximately 10 minutes.

    In large soup kettle, combine 2 cups water, celery salt, pepper, soup base, 1/2 stick butter, milk and parsley flakes.

    Heat mixture to simmering point.

    Add cabbage, ham and onion.

    Thicken with cornstarch and water.
