- 5 tablespoons butter
- 4 each onions chopped
- 4 cups carrots sliced
- 4 tablespoons flour, all-purpose
- 5 cups beef stock
- 3 1/2 cups milk
- 1 pinch salt
- 1 pinch black pepper
- 1/4 teaspoon nutmeg
Directions

1Melt butter in kettle.

2Saute vegetables until onions are clear.

3Blend in flour.

4Mix in broth and stir until smooth.

5Simmer covered 30 minutes.

6Put soup through blender to puree.

7Stir in milk.

8Adjust the seasonings.

9Stir until hot, but not boiling.

10Ladle into bowls and sprinkle nutmeg on top.
