Creamed Chicken

Ingredients

  • 2 c. skinless, boneless cooked chicken, cubed
  • 1 1/2 Tbsp. butter or diet margarine
  • 1 1/2 Tbsp. flour
  • 1/4 c. heavy cream (light is okay)
  • 1/8 c. pimentos
  • salt and pepper to taste
  • 1/2 Tbsp. parsley
  • 2 drops Tabasco sauce
  • 3/4 c. chicken broth (Healthy Choice is rated best, homemade is better)
  • brandy
  • 4 toast points

Directions

    Place raw chicken in skillet with 1 1/2 cups water.

    Bring to boil.

    Reduce heat. Cover and simmer 12 to 15 minutes, until done. Drain.

    Heat butter; add flour.

    When thick, add cream, pimentos, salt, pepper, parsley and Tabasco sauce.

    Add chicken and brandy and heat.

    Stir constantly just to boil.

    Serve over rice or noodles. (Yummy Pam.) Great as a light lunch.
