- 2 c. skinless, boneless cooked chicken, cubed
- 1 1/2 Tbsp. butter or diet margarine
- 1 1/2 Tbsp. flour
- 1/4 c. heavy cream (light is okay)
- 1/8 c. pimentos
- salt and pepper to taste
- 1/2 Tbsp. parsley
- 2 drops Tabasco sauce
- 3/4 c. chicken broth (Healthy Choice is rated best, homemade is better)
- brandy
- 4 toast points
Directions

1Place raw chicken in skillet with 1 1/2 cups water.

2Bring to boil.

3Reduce heat. Cover and simmer 12 to 15 minutes, until done. Drain.

4Heat butter; add flour.

5When thick, add cream, pimentos, salt, pepper, parsley and Tabasco sauce.

6Add chicken and brandy and heat.

7Stir constantly just to boil.

8Serve over rice or noodles. (Yummy Pam.) Great as a light lunch.
