- 1 c. flour
- 1 c. yellow corn meal
- 2 Tbsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 2 Tbsp. cold margarine, cut in pieces
- 2/3 c. buttermilk
- 1 egg
- 1 (8 1/4 oz.) can creamed corn
Directions

1Mix flour, corn meal, sugar, baking powder, salt and baking soda.

2Cut in butter until mix resembles crumbs.

3Mix buttermilk, egg and corn and stir into flour mixture until moist.

4Grease 12 muffin tins and fill 2/3 full.

5Bake at 425° for 20 to 25 minutes or until golden brown.

6Cool 5 minutes before removing.
