  • 2 Tbsp. vegetable shortening or drippings
  • 2 c. corn meal
  • 2 to 4 Tbsp. sugar
  • 1 1/2 c. milk
  • 1 egg
  • 1 c. whole kernel corn, drained
  • 1 c. shredded Cheddar cheese

    In a 10-inch ovenproof skillet or a 9-inch square pan, melt shortening in a 425° oven.

    Combine dry ingredients, using 2 to 4 tablespoons of sugar according to taste.

    Add remaining ingredients.

    Stir in melted shortening; mix well.

    Pour into hot prepared skillet.
