Creamed Eggs Chartres Recipe

Ingredients

  • 1 c. white onions
  • 1/3 c. butter
  • 1/2 c. flour
  • 2 c. of lowfat milk
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne
  • 4 hard boiled Large eggs
  • 2 tbsp. Parmesan cheese
  • 1 tbsp. paprika

Directions

    Heat 9 inch skillet over medium heat.

    Saute/fry onion in butter till transparent.

    Stir in flour and cook slowly 3 to 5 min more.

    Blend in lowfat milk and egg yolk till smooth.

    Add in salt and pepper.

    Cook stirring constantly 8 to 10 min or possibly till sauce thickens.

    Remove from heat, add in sliced Large eggs and mix lightly.

    Spoon into 2 (8 ounce.)

    casseroles and sprinkle lightly with paprika and Parmesan cheese.

    Mix together.

    Place in oven till heated.
