- 1 lb. leeks
- 1/4 c. olive oil or safflower
- 1/4 c. potato flour or brown rice flour
- 1/4 c. olive oil
- 1 c. water
- salt and pepper to taste
Directions

1Trim and slice leeks crosswise, then wash them well.

2In a heavy skillet, saute leeks in 1/4 cup olive oil for about 5 minutes.

3Turn down heat. Cover tightly to steam for 10 minutes or so.

4Put 1/4 cup olive oil in saucepan. Dissolve potato flour or brown rice flour in oil and heat until mixture bubbles. Stir in water. Continue to cook a minute or so until well combined.

5Cook 10 minutes longer after adding leeks. Salt and pepper to taste. Makes 6 to 8 servings.
