- 4 pounds Yukon Gold Potato- cut in 1.5 in cubes
- 2 pound Parsnips- cut in 3/4 in cubes
- 1 quart Heavy Cream
- 1/2 pound Unsalted butter
- 1 teaspoon Salt
- 1 cup Water
- 1/4 teaspoon Freshly grated nutmeg
- 1/4 teaspoon white pepper
Directions

1Cube parsnips and potato

2Bring water,Heavy cream, salt just to a boil

3Add potatoes and parsnips- simmer 20-25 min (until tender)

4Strain and reserve liquid

5Use food mill or ricer to press potatoes and parsnips

6Add butter and some of reserved liquid until creamy

7Add grated nutmeg to taste

8Add salt to taste
