Creamed Parsnip And Potato Puree

Ingredients

  • 4 pounds Yukon Gold Potato- cut in 1.5 in cubes
  • 2 pound Parsnips- cut in 3/4 in cubes
  • 1 quart Heavy Cream
  • 1/2 pound Unsalted butter
  • 1 teaspoon Salt
  • 1 cup Water
  • 1/4 teaspoon Freshly grated nutmeg
  • 1/4 teaspoon white pepper

    Cube parsnips and potato

    Bring water,Heavy cream, salt just to a boil

    Add potatoes and parsnips- simmer 20-25 min (until tender)

    Strain and reserve liquid
  5. 5
    Use food mill or ricer to press potatoes and parsnips

    Add butter and some of reserved liquid until creamy
  7. 7
    Add grated nutmeg to taste

    Add salt to taste
