Pineapple Cookies

  • 1 c. granulated sugar
  • 1 c. light brown sugar, packed
  • 1 c. butter or margarine
  • 3 eggs
  • 4 c. flour
  • 1 c. nut meats, chopped medium fine
  • 1 1/2 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. vanilla
  • 1 (No. 2) crushed pineapple, drained

    In large bowl of electric mixer combine sugars and butter. Beat until well mixed.

    Add eggs, one at a time.

    Continue beating until mixture is creamy.

    Next, add flour, soda, baking powder, salt, vanilla, crushed pineapple and nuts and mix on medium speed for a minute or two.

    Do not overbeat.

    Drop by teaspoons on greased cookie sheet and bake for about 10 minutes or until lightly browned.

    Do not overbake.

    Bake at 375°.

    Place on cookie rack to cool.
