Creamed Parsnips

- 2 lb. parsnips, peeled and roughly chopped
- salt and pepper to taste
- 5 oz. fresh cream
- chopped parsley (to garnish)
Directions

1Cook the parsnips in boiling salted water for 35 to 40 minutes until very tender. Drain thoroughly, then return to the pan and mash with a potato masher. Stir in the cream and season to taste. Heat gently.

2Serve hot. Garnish with parsley.
