- 6 medium potatoes (2 lb.), peeled and cut into 1/2-inch cubes
- 3 Tbsp. butter or margarine
- 1/4 c. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. milk
- paprika and minced fresh parsley
Directions

1Place potatoes in a saucepan and cover with water.

2Bring to a boil.

3Reduce heat; cover and cook for 15 to 20 minutes or until tender.

4Meanwhile, in another saucepan, melt butter.

5Stir in the flour, salt and pepper until smooth.

6Gradually add milk.

7Bring to a boil; cook and stir for 2 minutes or until thickened.

8Drain potatoes and place in a serving bowl.

9Add cream sauce and toss gently.

10Sprinkle with paprika and parsley.
