- 1 (10 oz.) pkg. frozen chopped spinach
- 2 strips bacon, chopped fine
- 1 1/2 Tbsp. onion, chopped fine
- 1 c. half and half
- 1 1/2 Tbsp. butter
- 1 Tbsp. flour
- 3/4 tsp. salt
- 1/4 tsp. black pepper
Directions

1Thaw and then cook spinach for 4 minutes in salted boiling water.

2Drain and set aside.

3In a skillet, brown the bacon and onion.

4Add salt and pepper to bacon and onion.

5Set aside.

6Bring the half and half to a boil in a cooking pot.

7Melt the butter in a saucepan and add flour.

8Mix thoroughly and combine with the half and half.

9Cook until mixture thickens.

10Add the spinach, bacon and onions to the half and half.

11Stir thoroughly and heat. Serves 4.
