- 1 lb. fresh spinach
- 1/4 c. butter or margarine
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 1/4 c. sour cream
- 1/4 tsp. pepper
- salt to taste
- 1/8 tsp. ground nutmeg
- paprika
Directions

1Wash spinach thoroughly.

2Remove stems.

3Tear leaves into large pieces.

4Cook in a small amount of boiling water 5 to 10 minutes or until tender.

5Drain.

6Place on paper towels and squeeze until barely moist.

7Melt butter in a large skillet; saute onion and garlic until tender.

8Stir in next 4 ingredients.

9Add the spinach and cook over low heat until thoroughly heated. Sprinkle with paprika.

10Serves 4.
