- 2 lb. spinach, cooked and drained
- 3 shallots, minced
- 1 1/4 c. milk
- 3 Tbsp. cornstarch
- 1/4 tsp. nutmeg
- 1/2 c. pine nuts
- 3 Tbsp. oil or spinach water
Directions

1Saute shallots in oil or water until soft.

2Add cornstarch to milk and stir until dissolved.

3Pour over shallots, stirring constantly.

4Add spinach and nutmeg.

5Continue cooking over medium heat until thickened and heated through.

6Garnish with pine nuts before serving.
