- 4 tbsp butter
- 1/4 cup chopped shallot
- 36 oz baby spinach
- 1 1/2 tbsp flour
- 2/3 cup milk
- 2-3 tbsp heavy cream
- 1 pinch nutmeg
- 1/2 cup grated Parmesan cheese
- 1/4-1/2 cup fresh breadcrumbs
Directions

1Preheat oven to 375°F. Lightly grease a baking dish.

2In a large frying pan, melt 2 tbsp butter over medium heat. Cook shallot for 3-5 mins, until softened. Add spinach and cook, tossing, for 5 mins, until wilted. Remove spinach from pan, reserving liquid.

3Add remaining butter to pan. Once melted, add flour and cook for 2 mins, stirring occasionally. Whisk in milk until smooth then add heavy cream, nutmeg, Parmesan, spinach and reserved liquid. Season. Transfer to prepared baking dish and bake for 15 mins, or until mixture bubbles.

4Preheat broiler. Sprinkle breadcrumbs over spinach mixture then broil until golden brown and crunchy.
