- 1 lb. spinach (fresh, frozen, canned)
- 1 Tbsp. butter
- 2 tsp. flour
- few grains of pepper
- 1/8 tsp. ground nutmeg
- 3/4 c. milk
Directions

1Wash fresh spinach thoroughly.

2Add salt and cook until tender.

3Do not add water.

4Chop fresh spinach very fine.

5Melt butter in a saucepan.

6Blend in a mixture of flour, pepper and nutmeg.

7Heat until mixture bubbles.

8Remove from heat; add milk gradually, stirring constantly.

9Bring to boil; cook 1 to 2 minutes longer.

10Blend spinach into sauce and serve hot.

11Makes 4 servings.
