  • 2 eggs, beaten
  • 1 1/2 c. sugar
  • 1/2 c. oleo, softened
  • 1/4 c. flour
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 1/4 tsp. almond extract
  • 2 c. Angel Flake coconut

Directions

    Mix eggs and sugar.

    Add oleo, flour, milk, vanilla and almond extract; mix well.

    Add 1 1/2 cups of coconut and pour into an unbaked 9-inch pie crust.

    Top with remaining 1/2 cup coconut. Bake at 325° for 50 to 60 minutes.
