  • 14 ounces coconut milk
  • 1 cup chicken broth
  • 1 cup basmati rice

Directions

    Bring coconut milk and 1 cup broth to a boil over high heat in a 3 or 4 quart pan (watch it because it will boil over quickly), then add rice.

    Cover and simmer until rice is tender, about 25 minutes.
