- 1 English (hothouse) cucumber
- 1 tablespoon kosher salt
- 1/4 cup Greek-style yogurt
- 2 tablespoons heavy cream
- 2 garlic cloves, minced
- 1 teaspoon chopped fresh mint
- Juice of 1 lemon
- 1/4 teaspoon freshly ground black pepper
Directions

1Cut the cucumber in half lengthwise.

2Scoop out the seeds with a teaspoon.

3Slice the cucumber very thinly with a mandoline or a sharp knife.

4Put the cucumber in a medium stainless steel or glass bowl; add the salt and mix thoroughly to combine.

5Set aside for 10 to 15 minutes.

6Transfer the cucumbers to a colander and rinse thoroughly.

7Squeeze dry with your hands and then pat dry with paper towels.

8Put the cucumbers back into the bowl and add the yogurt, cream, garlic, mint, and lemon juice.

9Toss to combine; season with the pepper.

10Refrigerate until ready to use or for up to 2 days.
