9 steps

Ingredients

  • 2 cups whole milk
  • 2 cups water
  • 1 teaspoon salt
  • 1 cup uncooked grits (not instant)
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 2 teaspoons freshly ground black pepper

Directions

  1. 1
Bring the milk and water to a boil in a heavy-bottomed saucepan over medium heat.
  2. 2
    Stir in the salt.
  3. 3
Slowly add the grits, stirring constantly.
  4. 4
When the grits begin to thicken, turn the heat down to low and simmer for 30 to 40 minutes, stirring occasionally to prevent the grits from scorching.
  5. 5
Add the butter and cream, stirring to incorporate thoroughly, and simmer for 5 minutes.
  6. 6
    Stir in the pepper.
  7. 7
Serve the grits immediately or keep them warm, covered, in a double boiler over simmering water.
  8. 8
Note: If the grits are too thick, stir in more cream or milk.
  9. 9
Remember that grits solidify as they cool; they will get thicker once on the plates.
