Creamy Mashed Cauliflower

- 1 head Cauliflower (a Large Head)
- 3 Tablespoons Olive Oil
- 3 cloves Garlic, Minced
- 23 cups Fresh Chives, Finely Chopped
- 1 sprig Fresh Rosemary, Chopped (or 2 Teaspoons Dried)
- 3/4 cups Full Fat Canned Coconut Milk
- Salt And Pepper, to taste
Directions

1Wash and chop the cauliflower, and make sure to remove all the leaves.

2Place the chopped cauliflower in a large pot, and add just enough water to steam it (about 2 inches of water in the bottom of the pot).

3Place a lid on the pot, and bring the water to a boil.

4When it comes to a boil, turn the heat to low and steam until its easy to stick a fork into the cauliflower.

5This should take about 20 minutes.

6While the cauliflower is steaming, add the olive oil to a skillet over medium heat.

7Saute the garlic, chives, and rosemary in the oil until the garlic is light golden brown.

8When the cauliflower is done steaming, drain it and place it in a food processor to mash until smooth (no lumps).

9If you dont have a food processor, you can use a masher.

10Place the mashed cauliflower back into the pot and turn the stove to medium low.

11Add the coconut milk and the chive and garlic mixture.

12Add salt and pepper to taste, and enjoy!
