Creamy MINUTE RICE Pudding

Ingredients

  • 1 3/4 cups milk
  • 1/2 cup Minute Rice Brand Rice
  • 2 Tbsp. each sugar and raisins
  • 1/4 tsp. salt
  • 1 egg
  • 1/4 tsp. vanilla
  • dash nutmeg

Directions

    POUR milk, rice, sugar, raisins and salt into saucepan.

    BRING to a boil, stirring constantly.

    REDUCE heat and simmer uncovered for 6 minutes, stirring occasionally.

    BLEND egg, vanilla and nutmeg together in bowl; gradually stir a small amount of hot rice mixture into egg mixture, stirring well.

    RETURN to saucepan, cook and stir over low heat for 1 minutesute.

    (Do not boil.)

    REMOVE from heat.

    LET stand for 30 minutes.

    POUR into serving bowl or dessert dishes.

    SERVE warm or cold.
