  • 1 cup yellow cornmeal
  • 1 12 cups milk
  • 14 teaspoon salt
  • 18 teaspoon cayenne pepper
  • 6 ounces feta or 6 ounces mild goat cheese

    In a small bowl, stir together the cornmeal and 1 cup milk until blended and smooth.

    In a medium saucepan, bring 1 1/2 cups water and the remaining 1/2 cup milk, salt and cayenne to a simmer over low heat.

    Stirring constantly, gradually pour in the cornmeal milk mixture.

    Cook over low heat, stirring constantly for 10 minute or until thick and creamy.

    Crumble in the cheese and cook, stirring, for 3-4 minutes or until the cheese is melted.
