Creamy Rice Pudding

  • 1 liter 2% milk
  • 1/2 cup short-grain rice, I use arborio
  • 1 cinnamon stick
  • 4 slices lemon peel, yellow part only
  • 1/3 cup caster sugar
  • 1/2 cup light cream

Directions

    In a large saucepan bring milk to the boil.

    Add rice, cinnamon stick, lemon peel, sugar. Lower the heat and let it gently simmer for 30min.

    Stir once in a while.

    Add light cream and keep cooking for 20min.

    Spoon into 4 bowls or glasses. Cover with plastic wrap, refrigerate.
