  • 3 c. scalded milk
  • 1 Tbsp. butter or margarine
  • 1 1/4 c. cooked rice
  • 1/4 tsp. salt
  • 1/2 c. raisins
  • 1/4 tsp. mace
  • 2 eggs, slightly beaten
  • 1/2 c. sugar

Directions

    Mix milk and next 6 ingredients.

    Slowly stir into the eggs. Turn into 1 1/2-quart casserole.

    Set in a pan 1/2 full of hot water.

    Bake at 325° for about 1 hour, stirring 1 or 2 times during first 30 minutes.

    Inserted knife, near edge, comes out clean when pudding is done.
