  • 1 1/2 c. cooked rice
  • 2 c. milk, divided
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 2/3 c. raisins
  • 1 Tbsp. margarine
  • 1/2 tsp. vanilla
  • dash of nutmeg

Directions

    Combine rice, 1 1/2 cups milk, sugar and salt in a heavy saucepan.

    Cook over medium heat, stirring occasionally until thick and creamy, 15 to 20 minutes.

    Blend remaining 1/2 cup milk and egg. Stir into rice mixture; add raisins.

    Cook 2 minutes longer, stirring constantly.

    Add margarine and vanilla.

    Sprinkle with nutmeg.
