  • 2 T Butter
  • 1 Clove Garlic minced
  • 2 T Flour
  • 1/2 t Salt
  • 1/8 t Pepper
  • 3/4 C Half & Half
  • 1 lb Spinach cooked and drained

    Melt the butter in a saucepan over low heat. Saute the garlic for one minute. Blend in the flour to make a roux. Add salt and pepper and heat until the mixture bubbles, stirring constantly. Remove from the heat. Gradually add the half & half. Return to heat and stir until the mixture is smooth and thickened. Blend the well drained spinach into the sauce and serve.
