- 2 Tbsp. olive oil
- 3 c. chopped green onion
- 1 c. chopped onion
- 1 c. chopped bell pepper
- 2 c. chopped parsley
- 1 c. white wine
- garlic to your taste
- 3 c. chopped tomatoes
- 2 1/2 c. V-8 juice
- 1 Tbsp. Worcestershire sauce
- 4 tsp. salt
- 1/4 tsp. cayenne pepper
- 3 to 4 c. cubed raw catfish
Directions

1Saute, in olive oil, green onion, onion, bell pepper, parsley, white wine and garlic for 5 to 7 minutes.

2Add tomatoes, V-8 juice, Worcestershire sauce, salt, cayenne pepper and catfish. Simmer, covered, for 20 to 30 minutes.

3Serve over cooked rice.
