- 3 tbsp. butter
- 1 onion, chopped fine
- 1/2 bell pepper, chopped fine
- 2 c. whole kernel corn, fresh or canned
- 2 tbsp. chopped pimento peppers
- 1 tbsp. sugar
- 1 tsp. salt
- 1 tsp. pepper
- 3 eggs, well beaten
- 1/2 c. grated cheddar cheese
Directions

1Melt butter in skillet. Saute onion & bell pepper. Add corn, sugar, salt, pepper & pimentos. Cool & add cheese & well beaten eggs. Pour into buttered 2-quart casserole & set in pan of hot water.Bake 35 minutes at 350 degrees. Serve at once.
