Ingredients
- 2 small eggplants
- 1 c. tomato, chopped
- 2 small onions, chopped
- 1 c. grated cheese
- 2 tsp. baking powder
- 1 green pepper, chopped
- 1 egg
- 1 Tbsp. bacon drippings
- 1/2 c. bread crumbs
- salt and pepper to taste
Directions

1Peel and slice eggplants.

2Place in pot in salt water for 1 hour, then cook until tender.

3Drain and mash.

4Add egg, tomato, salt, cheese, onion and pepper to eggplant.

5Stir in baking powder and bacon drippings.

6Combine and place in greased baking dish. Sprinkle with bread crumbs.

7Bake for 40 minutes in a 350° oven. Makes 8 servings.
