- 1 medium eggplant, peeled and cubed
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1 (8 oz.) can stewed tomatoes
- 1 clove minced garlic
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. oregano
- 1/8 tsp. Tabasco sauce
- 1 lb. Mozzarella cheese
Directions

1Saute eggplant and onion in 2 tablespoons margarine.

2Mix all ingredients in a skillet and cook, covered, over low heat until vegetables are tender (about 30 minutes). Stir occasionally. Cover with cheese.
