- 1 bell pepper
- 1 onion
- 2 Tbsp. vegetable oil
- 1 can tomato soup
- 1/4 c. water
- 1 tsp. vinegar
- 8 eggs
Directions

1Slice bell pepper and onion, then saute in oil just until tender.

2Add soup, water and vinegar.

3Cook over low heat about 5 minutes.

4Meanwhile cook four 2-egg omelettes or scramble 8 eggs. Serve Creole sauce over eggs.
