Stuffed Meat Loaf

Ingredients

  • 1 lb. lean ground beef
  • 1 egg
  • 2 Tbsp. ketchup
  • handful Italian bread crumbs
  • 1 (6 oz.) can tomato sauce
  • salt and pepper to taste
  • 1/2 stick butter or margarine
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 6 to 8 mushrooms, chopped
  • 1 1/2 Tbsp. oregano

Directions

    Combine meat, egg, ketchup and bread crumbs.

    Roll until 1-inch thick between 2 sheets of waxed paper.

    Remove top sheet of waxed paper.

    Saute onions, green pepper and mushrooms in butter or margarine.

    Add salt, pepper and oregano.

    Pour this mixture onto rolled out beef.

    Roll up carefully.

    Place in casserole dish.

    Pour tomato sauce over it and bake at 350° for 1 hour.
