Ingredients
- 2 or 3 green peppers, coarsely cut
- 1 medium bunch celery, coarsely cut
- 1 medium onion, coarsely cut
- 1 tsp. salt
- dash of pepper
- 4 slices bacon
- 3 Tbsp. bacon drippings
- 1 pod hot pepper
- 2 Tbsp. corn meal
- 1 can diced tomatoes
Directions

1Cook bacon until crisp; set aside.

2Add cut up peppers, celery and onion to bacon drippings.

3Slowly saute until onion is tender, but not brown.

4Add tomatoes, hot pepper, salt and pepper. Cover; simmer 20 minutes.

5Blend corn meal with a little water; stir into simmering mixture.

6Cover and simmer another 5 minutes. Crumble bacon on top at serving time.
