- 5 or 6 pork chops, 3/4-inch thick
- 1 bell pepper
- 1 medium onion
- Tex-Joy or Tony's Cajun seasoning to taste
- 1 can Ro-Tel or stewed tomatoes
- 1 1/2 c. raw or leftover rice
- 2 Tbsp. oil
Directions

1Put oil in iron skillet and brown seasoned pork chops.

2Drain oil and return chops to skillet.

3Add raw or cooked rice on top of pork chops.

4Chop bell pepper and onion on the rice.

5Pour can of tomatoes on top.

6Put a lid on the skillet and simmer until chops are fork-tender.

7Serve hot and enjoy.
