Creole Pork Chops

Ingredients

  • 5 or 6 pork chops, 3/4-inch thick
  • 1 bell pepper
  • 1 medium onion
  • Tex-Joy or Tony's Cajun seasoning to taste
  • 1 can Ro-Tel or stewed tomatoes
  • 1 1/2 c. raw or leftover rice
  • 2 Tbsp. oil

Directions

    Put oil in iron skillet and brown seasoned pork chops.

    Drain oil and return chops to skillet.
  3. 3
    Add raw or cooked rice on top of pork chops.

    Chop bell pepper and onion on the rice.

    Pour can of tomatoes on top.

    Put a lid on the skillet and simmer until chops are fork-tender.

    Serve hot and enjoy.
