- 2 c. peeled, cubed potatoes
- 1 green pepper, sliced
- 1 small onion, chopped
- 1 c. tomato juice
- salt and pepper to taste
Directions

1Simmer potatoes in boiling water for 5 minutes.

2Drain and add green pepper, onion and tomato juice.

3Simmer 10 minutes longer or until potatoes are tender.

4Add salt and pepper to taste while simmering.
