- 2 (10 oz.) cans tomatoes with green chiles, undrained
- 1 1/2 c. water
- 2 Tbsp. butter or margarine
- 1 tsp. garlic powder
- 1/2 tsp. dried parsley flakes
- 1/2 tsp. dried whole oregano
- 1/4 tsp. salt
- 1/2 c. chopped green pepper
- 1/2 c. chopped green onions
- 1 c. uncooked rice
Directions

1Drain tomatoes, reserving 1 cup juice.

2Combine juice, water and next 5 ingredients in a large saucepan.

3Bring to a boil; add vegetables and rice.

4Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.

5Yield: 4 to 6 servings.
