Ingredients

  • 2 (10 oz.) cans tomatoes with green chiles, undrained
  • 1 1/2 c. water
  • 2 Tbsp. butter or margarine
  • 1 tsp. garlic powder
  • 1/2 tsp. dried parsley flakes
  • 1/2 tsp. dried whole oregano
  • 1/4 tsp. salt
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped green onions
  • 1 c. uncooked rice

Directions

    Drain tomatoes, reserving 1 cup juice.

    Combine juice, water and next 5 ingredients in a large saucepan.

    Bring to a boil; add vegetables and rice.

    Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.

    Yield: 4 to 6 servings.
