- 2 1/2 cups graham wafer crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1 1/2 cups icing sugar (confectioners')
- 2 egg yolks
- 1 cup whipping cream
- 1 (19 ounce) can crushed pineapple, drained
Directions

1Combine all ingredients Mix graham wafer crumbs, melted butter, sugar and cinnamon.

2Reserve 3/4 cup of this mixture for topping.

3Press the rest into an 8 x 12 inch pan.

4Bake at 350 degrees F for 12 minutes.

5Cool.

6With mixer, cream butter and icing sugar.

7Add egg yolks and beat until light.

8Spread over the cooled crust.

9Beat whipping cream until stiff.

10Fold in pineapple.

11Spread over the second layer in the pan.

12Sprinkle the reserved crumb mixture over top.

13Chill for several hours or overnight.

14Cut into squares to serve.
