  • 1/4 Cup butter
  • 1/2 Cup diced yellow onion
  • 1/2 Cup diced celery
  • 1 Tbsp. minced parsley
  • 2 Tbsp. minced garlic
  • 1/2 tsp. basil leaves
  • 1/2 tsp. cayenne
  • 1/4 tsp. white pepper
  • 1/2 tsp. black pepper
  • 1 1/2 tsp. salt
  • 2-3 Bay leaves
  • 1 tsp. sugar
  • 1/4 Cup chopped green onions
  • 1 28oz. can diced tomatoes
  • 1 15oz can tomato puree
  • plus water to make 2 cups
  • 3 Cups chicken stock
  • 2 tsp. Crystal hot sauce

    Melt butter in heavy pot.

    Add: yellow onion and next 12 ingredients. Cook until bell pepper turns bright green and onion starts to turn transparent. Add remaining ingredients, bring to a boil, reduce heat to simmer, cook 45-60 minutes. Stir occasionally.
