- 1/4 c. rice
- 1/2 c. cut onion
- 2 Tbsp. bacon drippings
- 2 c. tomatoes
- 2 tsp. salt
- 1 tsp. sugar
- 1/8 tsp. paprika
- 1 Tbsp. cut parsley
Directions

1Wash rice; add 3 cups boiling water and boil 30 minutes.

2Cook onions in pan with drippings until tender, but not brown.

3Add tomatoes and boil 10 minutes; rub through strainer into boiled rice and water.

4Add seasoning and sprinkle with parsley.

5Add a little chopped green pepper if desired.
