- 1/2 c. chopped carrots
- 1/2 c. chopped celery
- 1 large onion, chopped
- 2 Tbsp. margarine
- 1 (16 oz.) can tomatoes
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. pepper
- few drops hot pepper sauce
- 1 c. lentils, cooked and drained
- hot cooked rice (optional)
Directions

1Cook carrots, celery and onion in hot margarine in medium size saucepan until lightly browned, about 10 minutes.

2Add tomatoes, salt, sugar, pepper, pepper sauce and lentils.

3Cover; simmer for 30 minutes, stirring occasionally.

4Serve over rice.

5Makes about 5 1/2 cups.
