Creole Turkey Cutlets

- 1 lb. turkey cutlets
- 2 Tbsp. vegetable oil
- 1 small onion, chopped
- 1/2 c. mushrooms, sliced
- 1 green pepper, chopped
- 1 1/4 c. whole tomatoes (canned)
- 1/8 tsp. garlic powder
- 1/8 tsp. thyme
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Sear cutlets quickly in hot oil, processing in batches if necessary.

2Remove.

3Quickly saute onions, green pepper and mushrooms.

4Pour off excess fat.

5Add tomatoes and seasonings. Bring to simmering and cook for 20 to 30 minutes.

6Add cutlets, spoon sauce over and cover.

7Simmer for additional 4 to 8 minutes. Serve with rice or hot buttered noodles.
