Creole Turkey Cutlets

  • 1 lb. turkey cutlets
  • 2 Tbsp. vegetable oil
  • 1 small onion, chopped
  • 1/2 c. mushrooms, sliced
  • 1 green pepper, chopped
  • 1 1/4 c. whole tomatoes (canned)
  • 1/8 tsp. garlic powder
  • 1/8 tsp. thyme
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

    Sear cutlets quickly in hot oil, processing in batches if necessary.

    Remove.

    Quickly saute onions, green pepper and mushrooms.

    Pour off excess fat.

    Add tomatoes and seasonings. Bring to simmering and cook for 20 to 30 minutes.

    Add cutlets, spoon sauce over and cover.

    Simmer for additional 4 to 8 minutes. Serve with rice or hot buttered noodles.
