- 1 c. chopped onion
- 1 clove garlic, minced
- 3/4 c. chopped green pepper
- 1/4 c. cooking oil
- 2 lb. zucchini, sliced (4 medium)
- 4 medium tomatoes, chopped
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. chopped fresh parsley
- 1/4 c. grated Parmesan cheese
Directions

1Cook onion, garlic and green pepper in hot oil in skillet until soft.

2Add zucchini, tomatoes, salt and pepper.

3Cover; cook over medium heat for 20 minutes or until zucchini is tender. Serve topped with parsley and Parmesan cheese.
