- 2 egg whites
- 6 tablespoons cornmeal
- 1/4 cup grated parmesan cheese
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground red pepper
- 1/8 teaspoon salt
- 4 -6 ounces catfish fillets
- cooking spray
- lemon wedge
Directions

1Preheat oven to 425°F.

2Combine dressing and egg whites, whisk well.

3Combine cornmeal, parmesan, flour, pepper and salt in shallow dish.

4Pat fish dry, dip in egg mixture and dredge in cornmeal mixture.

5Place fish on a baking sheet coated with cooking spray.
