Crispy Chicken Roll-Ups

  • 3 whole, boneless chicken breasts, halved and pounded (1 1/2 lb.)
  • 6 slices cooked ham (about 6 oz.)
  • 6 slices Swiss cheese (about 6 oz.)
  • 2 eggs, beaten
  • 2 c. cereal flakes, coarsely crushed (about 1 1/4 c. corn or wheat flakes crumbs)
  • 2 Tbsp. margarine, melted

Directions

    Top each chicken breast with 1 slice of ham and cheese.

    Roll up; secure with toothpicks.

    Dip in beaten eggs.

    Coat with cereal flake crumbs.

    Place chicken rolls in a greased baking dish; drizzle with margarine.
